Are you cravings for ice-cream and fro-yo rising with the temps? As a type-A, I’ve discovered underneath my ice-cream cravings are a need to physically cool down and energy surge to recoup from how the heat drains me.
The more we can stay cool, the less we hear the cool sweet siren. This recipe, I nicknamed the Mover, is a delicious way to get a little sweet with a lot of cool. It’s a client favorite.
Ingredients
½ head of green cabbage, shredded
½ head of red cabbage, shredded
½ cup radishes, sliced or shredded
½ bag of shredded carrots
1 apple, chopped
1 pear, chopped
½ cup walnuts
1/4 cup olive oil
1 cup raw apple cider vinegar
2 T honey
Salt and pepper to taste
Short on time? Buy pre-shredded cabbage and carrots.
Directions
1. Put cabbages, radishes, carrots, apples, pear and walnuts in a large bowl.
2. In a bowl, mix olive oil, apple cider vinegar, honey, salt and pepper.
3. Toss dressing over vegetables and fruit and let chill overnight.
The best part? It lasts for about a week so you can prep once and eat all week.
